Cooking Tips

  • Cook the shrimp just until they curl and turn pink, about 2 minutes. Overcooked shrimp go rubbery and no sauce will fix it.
  • Peel the shrimp but keep a few shells to fry in the butter first, then discard them - it deepens the sauce.

Ingredient Substitutions

  • Mayonnaise can be replaced with all-purpose cream for a less tangy sauce.
  • Works equally well with firm white fish cut into chunks.

What to Serve With It

  • Best with plenty of hot rice to absorb the sauce.

Storage and Reheating

  • Eat the same day. Reheated shrimp toughen badly.
