Method

    Brown the beef hard in batches. Crowding the pan steams it and you lose the crust that gives the stew its colour.

    Soften the garlic and onion, then return the beef with the stock and bay leaves.

    Simmer covered for 1 hour 15 minutes, until the beef gives easily to a fork.

    Stir in the tomato sauce and liver spread. The liver spread is what makes it caldereta rather than afritada - it thickens the sauce and makes it savoury.

    Add the potatoes and carrots and cook 15 minutes until tender.
