Chicken Quesadillas

Method

Toss the diced chicken with the cumin, paprika, chilli powder and a good pinch of salt.

Fry the chicken in a hot pan for 6 minutes until golden and cooked through, then set aside.

In the same pan, soften the onion and pepper for 4 minutes, then stir the chicken back in with a squeeze of lime.

Wipe the pan and set it over medium heat with a little butter.

Lay in a tortilla, cover half of it with cheese, then the filling, then a little more cheese, and fold it over.

Cook 2 to 3 minutes per side, pressing down with a spatula, until deep golden and the cheese has melted completely.

Rest for a minute before cutting into wedges, as it holds together far better this way. Serve with sour cream and salsa.
