Chicken Katsu Curry

Crisp panko chicken over rice with thick, mild Japanese curry sauce. The curry is sweeter and gluier than Indian or Thai curry, and that is exactly the point.

Method

    Soften the onion in butter over low heat for 12 minutes until sweet and golden.

    Stir in the flour and curry powder and cook 2 minutes to lose the raw taste.

    Add the stock a little at a time, stirring smooth after each addition, then add the carrot and potato.

    Simmer 20 minutes until the vegetables are soft and the sauce thickly coats a spoon. Stir in the honey.

    Flatten the chicken to an even thickness, then coat it in flour, then egg, then panko, pressing the crumbs on firmly.

    Fry in 170C oil for 4 minutes a side until deep golden. Rest on a rack, not paper, so the underside stays crisp.

    Slice thickly and serve over rice with the curry sauce poured alongside.

Cooking Tips

  • Flatten the chicken to an even thickness so it cooks through before the crumb burns.
  • Rest the fried cutlet on a rack, not paper - paper traps steam and softens the underside.

Ingredient Substitutions

  • Japanese curry roux blocks are the shortcut; the flour-and-curry-powder roux here is the from-scratch version.
  • Firm tofu or aubergine make a good vegetarian katsu.

What to Serve With It

  • Serve over rice with the sauce poured alongside, and pickles if you have them.

Storage and Reheating

  • The sauce keeps 4 days and freezes well. Fry the cutlet fresh - it never re-crisps properly.
