Bibimbap

Rice under a wheel of separately seasoned vegetables, mixed violently together at the table with gochujang. The arranging matters right up until the moment you destroy it.

Bibimbap, Korean rice bowl with seasoned vegetables, beef, a fried egg and gochujang

Method

  1. 01

Season the beef with 1 tbsp soy sauce, a little garlic and sesame oil, then fry until browned. Set aside.

  2. 02

Blanch the spinach for 30 seconds, squeeze it dry, and dress it with sesame oil, garlic and salt.

  3. 03

Blanch the bean sprouts for 2 minutes and dress them the same way, in a separate bowl.

  4. 04

Fry the carrot for 2 minutes and the mushrooms for 4 minutes, each on their own with a pinch of salt. Cooking them separately is the entire point - mixed together they turn into one flavour.

  5. 05

Fry the eggs sunny side up, keeping the yolks runny.

  6. 06

Pack rice into each bowl and arrange the vegetables and beef in sections on top, like spokes.

  7. 07

Set the egg in the middle with a spoonful of gochujang and a drizzle of sesame oil. Mix everything thoroughly before eating.

Cooking Tips

  • Cook and season each vegetable separately. Thrown in together they collapse into one flavour, which defeats the dish.
  • A hot stone bowl gives the crisp rice crust at the bottom; a heavy pan gets you most of the way there.

Ingredient Substitutions

  • Any firm vegetables work - courgette, bean sprouts, mushrooms, carrot.
  • Leave out the beef for a vegetarian version; the egg and gochujang carry it.

What to Serve With It

  • Serve with gochujang on the side and mix everything thoroughly before eating.

Storage and Reheating

  • Keep the components separate in the fridge for up to 3 days and assemble to order.
