Yakisoba

The stir-fried noodle you smell at every Japanese summer festival - pork, cabbage and a tangy-sweet brown sauce that caramelises against the hot pan.

Method

  1. 01

    Stir the Worcestershire, oyster sauce, ketchup, soy sauce and sugar together in a small bowl. This is your yakisoba sauce.

    Loosen the noodles under warm running water so they separate. Drain well.

    Heat oil in a wide pan over high heat. Fry the pork until the edges brown, about 3 minutes.

    Add carrot and the thick parts of the cabbage. Stir fry 2 minutes, keeping the heat high.

    Add the noodles and the rest of the cabbage. Toss to warm through.

    Pour the sauce around the edge of the pan, not the middle, so it sizzles. Toss everything for 2 minutes until glossy and slightly charred.

    Serve hot. Pickled ginger and a dusting of seaweed on top is traditional.
